Here at the Isle of Skye Baking Company, we have a passion for a diverse range of foods, which we aim to reflect in our products. With that in mind, in addition to our eclectic variety of breads, lunch-breads, cakes, shortbread and oatcakes, we also boast a fine selection of deli meats which can been enjoyed either as part of our highland-charcuterie platters, in our trademark lunch-breads, with venison chorizo with butternut squash and red onion or venison chorizo with spinach and homemade pesto (as pictured below) or purchased separately.

While the tradition of a delicatessen is rooted in continental Europe, the provenance of the meats we use as the centre-piece of our highland-charcuterie platters is very much Scottish.
In keeping with our passion for blending modern ideas with tradition, we have adapted the charcuterie platters, usually synonymous with hams and salamis from Italy and Spain by instead opting for Scottish meats, bringing a more contemporary feel to a tried and trusted favourite. This is why we chose meats sourced from Great Glen Charcuterie, situated in Roy Bridge, a village 3 miles east of Spean Bridge in the Highlands.
Originally from the Netherlands, the husband and wife partnership of Anja and Jan Jacob have been running Great Glen Charcuterie for the last ten years, producing a wide range of venison meats, all of which are produced by hand and air-dried. Lean, low in fat and sustainably sourced, the delicious meats, come in a range of flavours including smoked venison, venison and pork salami, venison chorizo and chilli venison chorizo.

Charcuterie platters, have long been a popular and sociable way for people to sample and enjoy a variety of food, and they have indeed proved to be popular with our visitors, from all over the globe. In tandem with Great Glen Charcuterie, we have acquired a fine selection of unique venison products, giving a local accent to an old favourite and adding a truly Scottish flavour for a worldwide audience to enjoy.
